Lavender Shortbread Cookies

We are often asked about our lavender shortbread cookies so here you go! After making them multiple times, we have simplified the recipe considerably from the original. Enjoy!

Lavender Shortbread Cookies

1/4 cup lavender sugar

1/4 cup powdered sugar

1 cup butter (room temperature)

2 cups all-purpose flour

Combine lavender sugar, powdered sugar and butter in mixing bowl; beat with mixer until smooth. This may also be done by hand if you prefer.

Add flour and continue to mix, scraping the sides of the bowl, (a dough hook is helpful or if you like, use your hands to help make the dough), until the dough forms a ball.

Roll out dough into a large 1/4-inch-thick rectangle on parchment paper.

Dough may be cut with a knife or cookie cutter(s).

Cover cut cookies with parchment paper and chill for 30 minutes.

Preheat oven to 325° Fahrenheit while dough chills.

Transfer cookies on parchment paper onto a baking sheet.

Bake for 20-25 minutes until golden brown on the edges.

Remove cookies from oven and cool.

Store in an airtight container.
